Production of structured fish mass from Baltic sea fish and its use in fish products Source of funding EMFF Scientific leader Irina Pilvere, Sandra Muižniece-Brasava Duration 2017-2018 Budget 675 829 EUR Project description The project analyzed sprat (Sprattus sprattus) and herring (Clupea harengus membras), including fish ratios in product preparation. Fish are very important in the diet because they are rich in calcium and Phosphorus, they are necessary for bone formation, as well as other valuable substances - vitamins and various minerals. The main result of the project is the production of structured fish mass (mince) from Baltic Sea fish which: could complement or replace the current structured mass of cod, mainly for the manufacture of semi-finished products, or for the production of new products which could be co-produced or are currently in production instead of traditional canned fish (sprat).
