This would be the development of technologies and recipes for Baltic anchovies in oil and Spratus balticus, analogous to traditional Italian anchovies in oil, and the mechanization of the technological processes for their production. The possible use of the new products on the market is: replacement of the traditional Italian canned Anchovy in oil with an analogous product with identical organoleptic products (taste, smell, color, structure) of Baltic herring (sprat); development of a new product for traditional canned fish (sprat), which would use the Baltic herring, whose use has fallen sharply due to significant changes in the market. The project will develop all technological information for production and quality control.
